The result is the 121-room hotel made up almost entirely of private bungalows, each with its own secluded pool. Designed as a collaborative effort between Athens architectural firms Divercity Architects and MPlusM, the hotel is the first venture outside the Greek capital for Yes! Hotels.

The hotel group behind Yes! Hotels, Donkey Hotels, is a family business run by Dakis Joannou, a renowned industrialist and art collector who is widely regarded as one of the world’s greatest patrons of contemporary art. As you’d expect from an owner with such depth of good taste, Hotel Noūs Santorini is a study in understated elegance thanks to its warm yet neutral color palette, filled with local craftsmanship and inspired patterns. archaeological murals on the island.
Rooms are impeccably furnished, with colorful stone floors and large, raw wood paneling, all bathed in dazzling Greek sunlight. As you’d expect, the hotel also contains a restaurant with a menu focused on local ingredients, including the wine list.
A room at Hotel Noūs Santorini starts at around $530 per night for the standard room, going up to $1,300 per night if you want breakfast included with your pool bungalow. So don’t spend your whole winter freezing Down Under, jump on a plane and enjoy a few weeks in the sunny Cyclades islands.
